Cauliflower Puree

 Cauliflower Puree Recipe

Cauliflower Puree Recipe

Cauliflower puree is a creamy, smooth alternative to mashed potatoes. It's a healthy and delicious side dish that pairs well with meats, seafood, and other main courses.

Ingredients

(Serves 4)

  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons butter (or olive oil for a dairy-free option)
  • 1/4 cup heavy cream or milk (or vegetable broth for a lighter option)
  • Salt and freshly ground black pepper, to taste
  • Optional: 2 cloves garlic, minced (for extra flavor)
  • Fresh herbs (parsley or chives), for garnish

Instructions

1. Prepare the Cauliflower

  • Cut the cauliflower into small florets, removing the stem and leaves.

2. Cook the Cauliflower

  • Boil or Steam: Place the cauliflower florets in a large pot of salted water and bring to a boil. Cook for about 8-10 minutes, or until the cauliflower is very tender. Alternatively, steam the florets for 10-12 minutes until soft.
  • Drain the cauliflower thoroughly to remove excess water. If desired, you can pat it dry with a paper towel to ensure the puree is not too watery.

3. Puree the Cauliflower

  • Transfer the cooked cauliflower to a food processor, blender, or large bowl if using an immersion blender.
  • Add the butter (or oil) and the heavy cream or milk. If using garlic, add it now for extra flavor. Blend until smooth and creamy. If the puree is too thick, add a bit more cream or broth to reach your desired consistency.

4. Season and Serve

  • Taste the cauliflower puree and adjust seasoning with salt and pepper as needed.
  • Transfer to a serving dish and garnish with fresh herbs like parsley or chives. Serve warm.

Tips

  • For Extra Creaminess: Add a bit of cream cheese or sour cream for an even richer texture.
  • Flavor Variations: Try adding a pinch of nutmeg, grated Parmesan, or roasted garlic for added depth of flavor.
  • Make Ahead: You can prepare the puree ahead of time and reheat it gently on the stove or in the microwave.

This Cauliflower Puree is a fantastic, lower-carb alternative to mashed potatoes and a perfect complement to any meal! 🥦✨
