Keto Cauliflower Mash Recipe

This Keto Cauliflower Mash is a low-carb alternative to mashed potatoes, making it the perfect side dish for a keto diet. It’s creamy, flavorful, and full of healthy fats!

Ingredients

(Serves 4)

  • 1 medium head of cauliflower, cut into florets
  • 3 tablespoons unsalted butter
  • 1/4 cup heavy cream (or full-fat coconut milk for a dairy-free version)
  • 2 oz cream cheese, softened (optional, for extra creaminess)
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon garlic powder or 2 cloves garlic, minced (optional for extra flavor)
  • 1/4 cup grated Parmesan cheese (optional, for added richness)
  • Fresh chives or parsley for garnish (optional)

Instructions

1. Cook the Cauliflower

  • Bring a large pot of salted water to a boil.
  • Add the cauliflower florets and cook for 8-10 minutes, or until fork-tender.
  • Drain the cauliflower well, making sure to remove any excess water. You can also pat it dry with a paper towel to prevent it from being too watery.

2. Mash the Cauliflower

  • Transfer the cooked cauliflower to a mixing bowl or a food processor.
  • Use a potato masher, immersion blender, or food processor to mash or blend the cauliflower until smooth.

3. Add Butter, Cream, and Cheese

  • Add the butter, heavy cream, and cream cheese (if using). Continue mashing or blending until the mixture is creamy and smooth.
  • If you like, stir in garlic powder or minced garlic for extra flavor.
  • Optionally, mix in the grated Parmesan cheese for a cheesy richness.

4. Season and Serve

  • Taste the mash and season with salt and pepper to your liking.
  • Garnish with fresh chives or parsley, if desired.
  • Serve immediately as a side dish.

Tips

  • Extra Creamy Texture: For an ultra-creamy texture, add more cream cheese or heavy cream to your desired consistency.
  • Flavor Variations: You can add a dash of nutmeg or roasted garlic for a different flavor.
  • Make Ahead: Store the cauliflower mash in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.

This Keto Cauliflower Mash is the perfect low-carb, rich, and creamy side dish that fits right into your keto meal plan! 🧄🧈
