  • 2 teaspoons brown sugar
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 3-4 medium-sized potatoes, peeled and sliced thinly (about 1/8-inch thick)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Puff pastry (about one sheet, thawed if frozen)

Instructions:
