Ingredients:

  • 2 lbs (900g) potatoes (Yukon gold or russet potatoes work well)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup sour cream (optional for added creaminess)
  • 1/4 cup chopped fresh parsley (for garnish)
  • 1/2 cup shredded mozzarella cheese (optional, for a cheesy topping)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.
  2. Prepare the Potatoes:

    • Wash and peel (if desired) the potatoes. Cut them into thin slices, about 1/8 to 1/4 inch thick. You can use a mandoline slicer for even slices.
  3. Make the Garlic Herb Mixture:

    • In a medium bowl, combine the melted butter, minced garlic, rosemary, thyme, salt, and pepper. Stir to combine.
  4. Layer the Potatoes:

    • Layer the potato slices in the greased baking dish, slightly overlapping them. Pour about 1/3 of the garlic herb butter mixture over the first layer of potatoes. Repeat the layers, making sure to drizzle the garlic butter between the layers.
  5. Add Cream and Cheese:

    • In a small bowl, whisk together the heavy cream and sour cream (if using). Pour the cream mixture over the layered potatoes.
    • Sprinkle the grated Parmesan cheese evenly on top of the potatoes.
  6. Bake:

    • Cover the casserole with aluminum foil and bake in the preheated oven for about 40 minutes.
    • After 40 minutes, remove the foil and bake for an additional 20-25 minutes, or until the potatoes are tender and the top is golden and bubbly. If you're adding mozzarella cheese, sprinkle it on top during the last 10 minutes of baking, allowing it to melt and become golden.
  7. Garnish and Serve:

    • Remove the casserole from the oven and let it rest for 5-10 minutes.
    • Garnish with freshly chopped parsley before serving.

Tips:

  • For extra flavor: Add a pinch of red pepper flakes for a slight kick or sprinkle some smoked paprika for a smoky depth.
  • Make ahead: You can prepare this casserole the day before, refrigerate it, and bake it the next day. If baking from the fridge, add a few extra minutes to the baking time.
  • Variation: You can add cooked bacon crumbles or sautéed onions for added texture and flavor.

This Butter, Garlic & Herb Potato Casserole is sure to be a hit with family and friends! The rich, creamy layers paired with the garlicky herb-infused butter make it an unforgettable side dish.
