  • 2 lbs (900g) potatoes (Yukon gold or russet potatoes work well)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup sour cream (optional for added creaminess)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions:

  1. Preheat the Oven:
