Ingredients (Makes 6 popsicles):

  • 2 ripe bananas, sliced
  • 1/2 cup strawberries, hulled and chopped
  • 1/2 cup pineapple chunks
  • 1 cup Greek yogurt (plain or vanilla)
  • 2 tablespoons honey or maple syrup (optional, for sweetness)
  • 1/4 cup melted chocolate
  • 2 tablespoons chopped nuts (optional)
  • 6 popsicle sticks

Instructions:

  1. Prepare the Fruit Layers:

    • In a blender, puree the bananas with 1/3 cup of Greek yogurt and 1 tablespoon of honey (if using). Set aside.
    • Puree the strawberries with 1/3 cup of Greek yogurt. Set aside.
    • Puree the pineapple with the remaining Greek yogurt.
  2. Layer the Popsicles:

    • In popsicle molds, layer the banana mixture, then the strawberry mixture, followed by the pineapple mixture.
    • Tap the molds gently to remove air bubbles between layers.
  3. Insert Sticks and Freeze:

    • Insert popsicle sticks into the molds. Freeze for at least 4-6 hours or until completely solid.

    • Once the popsicles are frozen, remove them from the molds.
