Banana Split Popsicles

These colorful and delicious banana split popsicles are a refreshing twist on the classic dessert—perfect for summer or anytime you crave a fun treat! 🍌🍫🍓

Ingredients (Makes 6 popsicles):

  • 2 ripe bananas, sliced
  • 1/2 cup strawberries, hulled and chopped
  • 1/2 cup pineapple chunks
  • 1 cup Greek yogurt (plain or vanilla)
  • 2 tablespoons honey or maple syrup (optional, for sweetness)
  • 1/4 cup melted chocolate
  • 2 tablespoons chopped nuts (optional)
  • 6 popsicle sticks

Instructions:

  1. Prepare the Fruit Layers:

    • In a blender, puree the bananas with 1/3 cup of Greek yogurt and 1 tablespoon of honey (if using). Set aside.
    • Puree the strawberries with 1/3 cup of Greek yogurt. Set aside.
    • Puree the pineapple with the remaining Greek yogurt.
  2. Layer the Popsicles:

    • In popsicle molds, layer the banana mixture, then the strawberry mixture, followed by the pineapple mixture.
    • Tap the molds gently to remove air bubbles between layers.
  3. Insert Sticks and Freeze:

    • Insert popsicle sticks into the molds. Freeze for at least 4-6 hours or until completely solid.
  4. Add Chocolate and Nuts (Optional):

    • Once the popsicles are frozen, remove them from the molds.
    • Drizzle melted chocolate over the popsicles and sprinkle with chopped nuts if desired.
    • Return to the freezer for 10 minutes to set the chocolate.
  5. Serve and Enjoy:

    • Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Tips:

  • Customize the Layers: Use other fruits like raspberries, blueberries, or mango for unique flavors.
  • Dairy-Free Option: Substitute Greek yogurt with coconut yogurt for a vegan and dairy-free treat.
  • Add a Crunch: Sprinkle granola or crushed cookies between layers for added texture.

These Banana Split Popsicles are a delightful and healthy way to cool down, blending creamy yogurt and fruity goodness with a touch of indulgence! 🍌🍓🍍✨
