Bacon jam is a rich, savory, and slightly sweet spread that pairs beautifully with burgers, crackers, cheese boards, or even scrambled eggs. It's easy to make and delivers a smoky, caramelized flavor in every bite.
Ingredients (Makes about 1 1/2 cups):
- 1 lb (450g) thick-cut bacon, diced
- 1 large onion, finely chopped

- 1/2 cup (120ml) brewed coffee
- 1/4 cup (60ml) apple cider vinegar
- 1/4 cup (60ml) maple syrup
- 1/4 cup (60g) brown sugar
- 1 tbsp balsamic vinegar
- 1/2 tsp smoked paprika (optional)
- Salt and freshly ground black pepper, to taste
Instructions:

Cook the Bacon:
- In a large skillet, cook the diced bacon over medium heat until crispy.
- Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving about 2 tbsp of bacon fat in the skillet.

Sauté the Onions and Garlic:
- Add the chopped onions to the skillet and cook in the bacon fat over medium heat until caramelized, about 10-12 minutes.
- Add the minced garlic and cook for another 1-2 minutes, stirring frequently.

Deglaze the Pan:
- Pour in the brewed coffee, apple cider vinegar, and maple syrup.
- Stir to scrape up any browned bits from the bottom of the skillet.

Add the Bacon and Sweeteners:
- Return the crispy bacon to the skillet.
- Stir in the brown sugar, balsamic vinegar, and smoked paprika (if using).

Simmer and Reduce:
- Lower the heat and simmer the mixture, stirring occasionally, for about 20-30 minutes, or until thickened to a jam-like consistency.

- For a smoother texture, transfer the mixture to a food processor and pulse a few times until you reach your desired consistency.
