  • 4 garlic cloves, minced
  • 1 lemon, zested and halved
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional, for color)
  • 2 tbsp butter, softened
  • 1 cup chicken broth or white wine (for basting)
  • Optional: Fresh herbs (thyme, rosemary) for extra flavor

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Marinade:

    • In a small bowl, mix chopped basil, minced garlic, lemon zest, olive oil, salt, pepper, and paprika.
    • Combine thoroughly into a paste.
  3. Season the Chicken:

    • Loosen the skin of the chicken breast by carefully sliding your fingers under it.

  6. Roast the Chicken:

    • Place the chicken breast-side up in a roasting pan. Add the chicken broth or wine to the bottom of the pan to keep the chicken moist and create a flavorful base for sauce.
    • Roast uncovered for about 1 hour and 20 minutes, or until the internal temperature of the thickest part of the breast reaches 165°F (74°C).
