Roast Basil Chicken Recipe

Ingredients

  • 1 whole chicken (3-4 lbs), cleaned and patted dry
  • 3 tbsp fresh basil leaves, finely chopped (or 1 tbsp dried basil)
  • 4 garlic cloves, minced
  • 1 lemon, zested and halved
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional, for color)
  • 2 tbsp butter, softened
  • 1 cup chicken broth or white wine (for basting)
  • Optional: Fresh herbs (thyme, rosemary) for extra flavor

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Marinade:

    • In a small bowl, mix chopped basil, minced garlic, lemon zest, olive oil, salt, pepper, and paprika.
    • Combine thoroughly into a paste.
  3. Season the Chicken:

    • Loosen the skin of the chicken breast by carefully sliding your fingers under it.
    • Spread half the basil marinade under the skin, directly on the meat.
    • Rub the remaining marinade over the entire chicken, including inside the cavity.
  4. Stuff the Chicken:

    • Place the lemon halves and optional fresh herbs into the cavity of the chicken.
  5. Butter and Truss:

    • Rub the softened butter over the chicken skin for a crispy finish.
    • Truss the chicken legs with kitchen twine to ensure even cooking.
  6. Roast the Chicken:

    • Place the chicken breast-side up in a roasting pan. Add the chicken broth or wine to the bottom of the pan to keep the chicken moist and create a flavorful base for sauce.
    • Roast uncovered for about 1 hour and 20 minutes, or until the internal temperature of the thickest part of the breast reaches 165°F (74°C).
  7. Baste Regularly:

    • Every 20-30 minutes, spoon pan drippings over the chicken to keep it juicy.
  8. Rest and Serve:

    • Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
    • Serve with roasted vegetables or a side of your choice. Garnish with fresh basil if desired.

Enjoy your flavorful roast basil chicken! Would you like suggestions for side dishes to pair with it?
