Ingredients (Serves 2-3):
- 2 cups leftover cooked rice (preferably chilled)
- 1 tbsp vegetable oil (or any cooking oil)
- 1 small onion, finely chopped
- 1/2 cup mixed vegetables (like peas, carrots, bell peppers, or corn)
- 1-2 cloves garlic, minced
- 2 large eggs (optional, for added protein)
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp sesame oil (optional, for extra flavor)
- 1/4 tsp black pepper
- 1-2 green onions, chopped (for garnish)
- 1/4 tsp chili flakes (optional, for a bit of heat)

Prepare the Rice:
- If you’re using cold, leftover rice from the fridge, break up any clumps with a fork to separate the grains.

Cook the Eggs (Optional):
- Heat a little oil in a large skillet or wok over medium heat. Crack the eggs into the pan and scramble them until fully cooked. Remove and set aside.

Sauté the Vegetables:
- In the same skillet, add the vegetable oil and sauté the chopped onion and garlic over medium heat until softened, about 2-3 minutes. Add the mixed vegetables and cook for another 2-3 minutes until tender.
