Lovely Leftover Rice Dish

If you have leftover rice and want to turn it into a delicious, easy meal, this recipe is perfect! It's a savory, quick stir-fry using your leftover rice with vegetables, eggs, and optional protein. A great way to repurpose rice and make something tasty!

Ingredients (Serves 2-3):

  • 2 cups leftover cooked rice (preferably chilled)
  • 1 tbsp vegetable oil (or any cooking oil)
  • 1 small onion, finely chopped
  • 1/2 cup mixed vegetables (like peas, carrots, bell peppers, or corn)
  • 1-2 cloves garlic, minced
  • 2 large eggs (optional, for added protein)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp sesame oil (optional, for extra flavor)
  • 1/4 tsp black pepper
  • 1-2 green onions, chopped (for garnish)
  • 1/4 tsp chili flakes (optional, for a bit of heat)
  • Protein options (leftover chicken, shrimp, tofu, etc. – optional)

Instructions

  1. Prepare the Rice:

    • If you’re using cold, leftover rice from the fridge, break up any clumps with a fork to separate the grains.
  2. Cook the Eggs (Optional):

    • Heat a little oil in a large skillet or wok over medium heat. Crack the eggs into the pan and scramble them until fully cooked. Remove and set aside.
  3. Sauté the Vegetables:

    • In the same skillet, add the vegetable oil and sauté the chopped onion and garlic over medium heat until softened, about 2-3 minutes. Add the mixed vegetables and cook for another 2-3 minutes until tender.
  4. Add the Rice:

    • Add the cold, leftover rice to the skillet. Stir-fry for 3-4 minutes, ensuring the rice is evenly heated and slightly crispy.
  5. Season:

    • Stir in the soy sauce, sesame oil (if using), black pepper, and chili flakes (if using). Mix well to coat the rice evenly in the seasonings.
  6. Add Eggs and Protein (Optional):

    • If you scrambled eggs earlier, add them back to the skillet. Also, add any leftover protein you’re using (chicken, shrimp, tofu, etc.). Stir everything together.
  7. Serve:

    • Once everything is combined and heated through, garnish with chopped green onions. Serve hot as a quick and satisfying meal.

Tips:

  • Make it vegetarian: Skip the eggs and add extra veggies or tofu for a veggie-packed dish.
  • For added flavor: Drizzle a bit of hoisin sauce or oyster sauce during the stir-frying process.
  • Add a crunch: Top with some toasted sesame seeds or crushed peanuts for a bit of texture.

This lovely leftover rice dish is a great way to repurpose yesterday’s rice into something new, flavorful, and satisfying! 🍚🥢
