Ingredients

  • 1 whole chicken (4-5 lbs), cleaned and patted dry
  • 8-10 garlic cloves, minced (plus 4-6 whole cloves for stuffing)
  • 2 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 2 tsp fresh rosemary, chopped (or 1 tsp dried rosemary)
  • 2 tsp fresh thyme, chopped (or 1 tsp dried thyme)
  • 1 tsp paprika (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chicken broth or white wine (for roasting)

Instructions

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare the Garlic Butter Mixture:

    • In a small bowl, mix minced garlic, softened butter, olive oil, rosemary, thyme, paprika (if using), salt, and pepper into a paste.
  3. Season the Chicken:

    • Gently loosen the skin of the chicken, particularly over the breasts and thighs, using your fingers.
    • Spread half of the garlic butter mixture under the skin and rub the remaining mixture all over the outside of the chicken.
  4. Stuff the Chicken:

    • Stuff the cavity with the lemon halves, whole garlic cloves, and a sprig or two of rosemary or thyme.
  5. Truss the Chicken:

    • Tie the legs together with kitchen twine to help the chicken cook evenly.
  6. Prepare the Roasting Pan:

    • Place the chicken breast-side up in a roasting pan.
    • Pour chicken broth or wine into the pan to keep the chicken moist and create flavorful drippings.
  7. Roast the Chicken:

    • Roast in the preheated oven for 1 hour and 20 minutes to 1 hour and 40 minutes, depending on the size of the chicken.
