 Garlic Roast Chicken Recipe

Here's a savory Garlic Roast Chicken recipe that’s bursting with flavor:

Garlic Roast Chicken Recipe

Ingredients

  • 1 whole chicken (3-4 lbs), cleaned and patted dry
  • 10-12 garlic cloves, peeled and minced (reserve a few whole cloves for roasting)
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter, softened
  • 1 lemon, halved
  • 2 tbsp fresh parsley, chopped (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika or smoked paprika (optional)
  • 1/2 tsp dried thyme or rosemary
  • 1 cup chicken broth or white wine (for basting)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Garlic Rub:

    • In a small bowl, mix minced garlic, olive oil, softened butter, salt, pepper, paprika, and dried thyme/rosemary to create a flavorful paste.
  3. Season the Chicken:

    • Carefully loosen the skin of the chicken breast by sliding your fingers under it.
    • Spread half the garlic mixture under the skin and the rest over the entire chicken, including inside the cavity.
  4. Stuff the Chicken:

    • Stuff the cavity with the lemon halves, a few whole garlic cloves, and fresh parsley if using.
  5. Truss and Butter:

    • Truss the chicken legs with kitchen twine for even cooking.
    • Rub a little extra butter over the skin for added crispiness.
  6. Prepare the Roasting Pan:

    • Place the chicken breast-side up in a roasting pan. Scatter any remaining whole garlic cloves around the pan.
    • Pour the chicken broth or wine into the bottom of the pan to keep the chicken moist and add flavor.
  7. Roast the Chicken:

    • Roast the chicken in the preheated oven for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the thickest part of the breast reaches an internal temperature of 165°F (74°C).
    • Baste the chicken with pan juices every 20-30 minutes for maximum flavor.
  8. Rest and Serve:

    • Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes to retain juices.
    • Carve and serve with the roasted garlic cloves and pan drippings.

Tips for Serving:

  • Pair this garlic roast chicken with creamy mashed potatoes, roasted vegetables, or a fresh green salad.
  • Use the pan drippings to make a quick garlic-infused gravy by whisking it with a bit of flour or cornstarch.
