Caramelized Almonds

 Caramelized Almonds Recipe

Caramelized Almonds Recipe

These sweet and crunchy caramelized almonds are a delicious treat that can be enjoyed as a snack, used to top desserts, or given as gifts. The caramelized coating gives them a perfect balance of sweetness and a slight crunch.

Ingredients:

  • 1 cup (150g) whole almonds (skin-on or skinless)
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp water
  • 1 tbsp butter
  • 1/2 tsp vanilla extract
  • Pinch of salt (optional, for salted caramelized almonds)

Instructions:

  1. Prepare the Baking Sheet:

    • Line a baking sheet with parchment paper or a silicone baking mat. This will prevent the caramel from sticking once it cools.
  2. Toast the Almonds (Optional):

    • If you prefer your almonds toasted, preheat your oven to 350°F (175°C). Spread the almonds in a single layer on the baking sheet and toast for 8-10 minutes, stirring halfway through. Keep an eye on them so they don't burn. Once done, remove them from the oven and set aside.
  3. Make the Caramel:

    • In a medium saucepan, combine the sugar and water. Heat over medium-low heat, stirring gently until the sugar has completely dissolved and begins to simmer. Allow it to simmer, without stirring, for about 3-5 minutes until the mixture turns a golden amber color.
  4. Add Butter and Vanilla:

    • Once the caramel has reached the desired color, remove it from heat and carefully stir in the butter and vanilla extract. The caramel will bubble up, so be cautious.
  5. Coat the Almonds:

    • Quickly add the toasted almonds to the caramel mixture and stir to coat the almonds evenly.
  6. Cool the Almonds:

    • Pour the caramelized almonds onto the prepared baking sheet, spreading them out into a single layer. Allow them to cool completely. As they cool, the caramel will harden and create a crunchy coating.
  7. Break Up Clumps:

    • Once cooled, break apart any clusters of almonds if needed.
  8. Store:

    • Store the caramelized almonds in an airtight container at room temperature for up to 1-2 weeks.

Tips and Variations:

  • Flavor Twist: Add a pinch of cinnamon or a few drops of almond extract to the caramel mixture for extra flavor.
  • Salted Caramelized Almonds: For a salted version, sprinkle a pinch of flaky sea salt over the almonds just after they’re coated in the caramel.
  • Different Nuts: You can use this same method for other nuts, such as pecans, cashews, or walnuts.
