A Strawberry Chocolate Mousse Cake is a delightful combination of rich chocolate cake layers, creamy chocolate mousse, and fresh strawberries. Here's how you can make it:

Ingredients:

For the Chocolate Cake Layers:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Chocolate Mousse:

  • 8 ounces semi-sweet chocolate, chopped
  • 2 cups heavy cream, divided
  • 1 teaspoon vanilla extract

For the Strawberry Layer:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar

For Garnish:

  • Fresh strawberries, sliced
  • Chocolate shavings or cocoa powder

Instructions:

  1. Prepare the Chocolate Cake Layers:

    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract to the dry ingredients, and beat on medium speed for 2 minutes.
    • Stir in the boiling water until the batter is well combined (it will be thin).
    • Pour the batter evenly into the prepared cake pans.
    • Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
    • Remove the cakes from the oven and let them cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  2. Prepare the Chocolate Mousse:

    • Place the chopped semi-sweet chocolate in a heatproof bowl.
    • In a small saucepan, heat 1 cup of heavy cream over medium heat until it begins to simmer.
    • Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes.
    • Stir the chocolate and cream together until smooth and glossy. Set aside to cool to room temperature.
    • In a separate mixing bowl, whip the remaining 1 cup of heavy cream and vanilla extract until stiff peaks form.
    • Gently fold the whipped cream into the cooled chocolate mixture until well combined. Set aside.
  3. Prepare the Strawberry Layer:

    • In a bowl, toss the sliced strawberries with granulated sugar. Set aside to macerate for about 15 minutes.
  4. Assemble the Cake:

    • Place one chocolate cake layer on a serving plate or cake stand.
    • Spread half of the chocolate mousse evenly over the top of the cake layer.
    • Arrange half of the macerated strawberries over the chocolate mousse layer.
    • Place the second chocolate cake layer on top and repeat the process with the remaining chocolate mousse and strawberries.
    • If desired, garnish the top of the cake with fresh strawberry slices and chocolate shavings or a dusting of cocoa powder.
  5. Chill and Serve:

    • Refrigerate the cake for at least 1 hour to allow the mousse to set.
    • Slice and serve chilled, and enjoy the delicious layers of chocolate cake, chocolate mousse, and fresh strawberries!

This Strawberry Chocolate Mousse Cake is sure to impress with its decadent flavor and beautiful presentation. Enjoy!
