 Peanut Butter Cup Cookies

Peanut butter cup cookies are a delightful treat that combines the flavors of peanut butter and chocolate. Here's a simple recipe for you:

Ingredients:

  • 1 and 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 24 miniature peanut butter cups, unwrapped

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat.

  2. In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.

  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using a hand mixer or stand mixer.

  4. Add the peanut butter, egg, and vanilla extract to the creamed butter and sugar mixture. Mix until well combined.

  5. Gradually add the dry ingredients (flour mixture) to the wet ingredients, mixing until a smooth dough forms.

  6. Using a cookie scoop or spoon, scoop out about 1 tablespoon of dough and roll it into a ball. Place the dough ball onto the prepared baking sheet. Repeat this process with the remaining dough, spacing the dough balls about 2 inches apart.

  7. Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden brown. The cookies will still be soft.

  8. Remove the baking sheet from the oven and immediately press a miniature peanut butter cup into the center of each cookie, pressing down slightly so that the cookie cracks around the edges.

  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  10. Once cooled, enjoy your delicious peanut butter cup cookies with a glass of milk or your favorite beverage!

These cookies are sure to be a hit with peanut butter and chocolate lovers alike. Enjoy!
